Pax Wines was founded in 2000 with a mission to explore the untapped potential of Syrah from cool climates, and today features a diverse lineup of small production wines from organic & sustainably farmed vineyards. Following a classic & minimal winemaking philosophy, each wine is foot-stomped, fermented using only ambient yeasts, aged primarily in Neutral French Oak and concrete, and bottled with no unnatural additions in order to purely express the unique and ephemeral quality of each site and vintage.
